One-Pot Pasta Bolognese

Classic Bolognese in one pot - minimal dishes and maximum flavor. Perfect for cooking ahead for the whole week. This budget-friendly recipe is a student favorite that delivers restaurant-quality taste without the hassle.

Why One-Pot Pasta?

One-pot cooking isn't just convenient - it's actually better for flavor development. When you cook the pasta directly in the sauce, the starches release and create a naturally creamy, cohesive dish. Plus, cleanup is a breeze when you only have one pot to wash.

Ingredients

  • 500g ground beef
  • 400g spaghetti or penne
  • 1 can (400g) crushed tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 500ml beef broth or water
  • Parmesan cheese for serving

Preparation Steps

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add the diced onion and cook for 3-4 minutes until softened.
  3. Add the garlic and cook for another minute until fragrant.
  4. Add the ground beef and break it up with a wooden spoon. Cook until browned, about 5-6 minutes.
  5. Stir in the tomato paste, oregano, and basil. Cook for 1 minute.
  6. Add the crushed tomatoes and beef broth. Bring to a boil.
  7. Add the pasta directly to the pot. Stir well to prevent sticking.
  8. Reduce heat to medium, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente.
  9. Season with salt and pepper to taste.
  10. Divide into 5 meal prep containers. Top with Parmesan when serving.

Perfect for Meal Prep

This recipe makes 5 generous servings, perfect for your weekly meal prep. The Bolognese actually tastes better after a day or two in the fridge as the flavors meld together. Simply portion into containers and reheat throughout the week.

Tips for Success

  • Use a wide, shallow pot for even cooking
  • Don't skip the tomato paste - it adds depth
  • Let it rest for 5 minutes before serving
  • Add a splash of pasta water if it gets too thick
